LECTURE TOPICS AND DESCRIPTIONS
Pre-harvest Ecology and Control of Escherichia coli O157:H7
This talk will introduce the origins of E. coli O157:H7, the factors associated with its emergence as foodborne pathogen and some elements of its epidemiology. The talk will focus mostly on presenting the level of understanding of its prevalence in ruminant animal populations as well as the factors influencing its incidence. The final part of the lecture will be to review the different alternatives evaluated to minimize its incidence in the intestinal tract of cattle.
Food Safety Microbiology of Organic Foods
This lecture will introduce the different risks associated with organic foods. The main emphasis will be to discuss the potential contamination with foodborne pathogens either by fresh produce or by the lack of effective sanitizers. A review of the current practices and regulations influencing those risks will be discussed.
Survival of Salmonella in Low Water Activity Foods
This lecture will cover the recently recognized risk associated with low-water activity foods and Salmonella contamination. A revision of the epidemiology and the incidence of recent recalls will be provided. The discussion will mostly be focused on understanding the unique ability that Salmonella cells have to become thermally resistant under conditions of low moisture.
BIOGRAPHICAL SKETCH – Francisco Diez-Gonzalez
Dr. Francisco Diez-Gonzalez is a Professor of Food Safety Microbiology in the Department of Food Science and Nutrition at the University of Minnesota. His research program is focused on the study and control of food-borne pathogens that include Shiga-toxin producing E. coli, Salmonella, Listeria monocytogenes and spore-forming bacteria. He teaches courses on food safety, food quality, and food microbiology. Dr. Diez earned his M.S. and Ph.D. degrees in Food Science from Cornell University. He has authored 65 peer-reviewed articles and ten book chapters. He serves on the editorial board of several scientific journals and has been a panel member on four different USDA National Institute of Food and Agriculture programs. He currently serves as the Chair of ASM’s Division P (Food Microbiology).
